Baste, bake and serve: the secret to a great ham is a quality glaze, like this one.

Ingredients (8)

  • 2kg ham
  • About 30 whole cloves
  • ¼ cup (70g) Dijon mustard
  • 1 lightly packed cup (160g) dark brown sugar
  • Juice of 2 oranges, plus orange segments to serve
  • 2 cinnamon quills
  • 1 star anise
  • ½ cup (125ml) dry white wine

Method

  • 1.
    Stud top of ham with cloves in a decorative pattern. Place the ham in a roasting pan.
  • 2.
    Place mustard, sugar, orange juice, cinnamon, star anise and wine in a small saucepan and stir over low heat to dissolve the sugar. Simmer over medium-low heat for 2-3 minutes until glaze thickens slightly.
  • 3.
    Brush some of the glaze all over ham and bake for 30 minutes. Baste ham again and return to the oven for a further 15 minutes until the ham is golden in colour (If the glaze starts to catch on the bottom of the roasting pan, add a cup of water.) Transfer the ham to a platter.
  • 4.
    Place any remaining glaze in a saucepan over low heat and simmer for 5-6 minutes until reduced to a thick glaze. Discard cinnamon and pour over the ham. Slice and serve with orange segments.
