Baked ham with spiced orange glaze
Baste, bake and serve: the secret to a great ham is a quality glaze, like this one.
Ingredients (8)
- 2kg ham
- About 30 whole cloves
- ¼ cup (70g) Dijon mustard
- 1 lightly packed cup (160g) dark brown sugar
- Juice of 2 oranges, plus orange segments to serve
- 2 cinnamon quills
- 1 star anise
- ½ cup (125ml) dry white wine
Method

1.Stud top of ham with cloves in a decorative pattern. Place the ham in a roasting pan.

2.Place mustard, sugar, orange juice, cinnamon, star anise and wine in a small saucepan and stir over low heat to dissolve the sugar. Simmer over medium-low heat for 2-3 minutes until glaze thickens slightly.

3.Brush some of the glaze all over ham and bake for 30 minutes. Baste ham again and return to the oven for a further 15 minutes until the ham is golden in colour (If the glaze starts to catch on the bottom of the roasting pan, add a cup of water.) Transfer the ham to a platter.

4.Place any remaining glaze in a saucepan over low heat and simmer for 5-6 minutes until reduced to a thick glaze. Discard cinnamon and pour over the ham. Slice and serve with orange segments.
