No-meat broccolini balls
Inspired by meat-free Mondays? Need to eat more vegetables? These meat-free 'meatballs' are an easy way to bring more greens and goodness into your week.
Ingredients (14)
- 2 bunches broccolini, roughly chopped
- 100g rocket leaves
- 1 bunch marjoram, leaves picked
- 30g psyllium husk (from supermarkets)
- 1 cup (120g) oat bran
- 1/4 cup (60ml) extra virgin olive oil, plus extra to drizzle
- 1 onion, finely chopped
- 3 garlic cloves, finely chopped
- 200g goat’s feta
- Finely grated zest of 1 lemon
- 2 eggs
- 2 zucchini, shredded lengthways
- 1 tbs lemon juice
- Labneh, mountain bread or other wrap breads, and sprouts, to serve

1.Place the broccolini, rocket and half the marjoram in a food processor and whiz until finely chopped.

2.Stir through the psyllium husk and oat bran.

3.Heat 1 tbs oil in a frypan over medium heat. Add onion and garlic, and cook, stirring, for 3-4 minutes until soft. Add broccolini mixture and cook, stirring, for 1 minute or until combined.

4.Set aside to cool. Once cool, combine with feta, lemon zest and eggs in a bowl. Season.

5.Using 2 tbs mixture per ball, form into 22 balls. Flatten slightly and place on a tray. In 2 batches, heat 1 tbs oil in a frypan over medium-low heat. Cook the balls for 2-3 minutes each side until golden. Repeat with remaining oil and balls.

6.Toss zucchini in a bowl with lemon juice, a drizzle of oil and remaining marjoram. Serve balls with zucchini salad, labneh, mountain bread and sprouts.
