Quick goat’s curd tarts
Super quick and easy, these protein packed filo tarts are great as a canape or substantial snack.
Ingredients (8)
- 3 eggs
- 1 cup (250ml) pure (thin) cream
- 1 finely chopped leek
- 2 tsp thyme leaves
- 125g goat’s curd
- 12 filo sheets
- Melted butter to brush pastry before baking
- top with leek, extra thyme and a little more goat’s curd.

1.Preheat oven to 180°c. cook 1 finely chopped leek in a little oil over low heat for 10 minutes, stirring, until soft. cool.

2.Blend 3 eggs, 1 cup (250ml) pure (thin) cream, 2 tsp thyme leaves and 125g goat’s curd in a processor until smooth. season.

3.Stack 12 filo sheets on top of each other, trim a strip from the pastry to form 30cm x 15cm rectangles, then halve into squares. cover with a damp tea towel.

4.Brush 4 squares with melted butter and use to line a 10cm loose-bottomed tart pan, overlapping and leaving pastry overhanging the edges. cover with a damp towel. repeat to form 6 tarts. Pour egg mixture into tart cases and top with leek, extra thyme and a little more goat’s curd. Bake for 25-30 minutes until the filling is just firm and pastry is golden.
