Roasted asparagus
Asparagus cooked like this doesn't have quite the brilliant green colour of steamed asparagus, however roasting really concentrates its flavour.
Ingredients (3)
- 3-4 bunches asparagus spears, woody ends trimmed
- 2-3 tbs extra virgin olive oil
- Lemon wedges, to serve

1.Preheat oven to 250°C. Place asparagus in a large baking tray in a single layer. Drizzle with oil, then use your hands to mix together so the spears are well coated.

2.Roast on the top shelf of the oven for 7-10 minutes until asparagus is tender when pierced with a skewer. Transfer to a platter, season with salt and pepper, then serve with lemon wedges.
