Sesame salmon with honey bok choy
Weeknight dinners just got gourmet with this delicious yet simple Asian salmon dish.
Ingredients (7)
- 1/3 cup (50g) each black and white sesame seeds
- 4 x 180g skinless salmon fillets, pin-boned
- 1/4 cup (60ml) olive oil, plus extra to brush
- 4cm piece ginger, grated
- 1 bunch spring onions, thinly sliced
- 1 tbs honey
- 4 bok choy, trimmed, sliced lengthways into 1cm strips

1.Preheat the oven to 180°C.

2.Combine the black and white sesame seeds on a plate. Brush the salmon all over with oil, season, then turn to coat in the sesame seeds.

3.Heat 2 tbs oil in a large frypan over medium heat. Add salmon and cook for 2 minutes each side or until opaque.

4.Transfer the salmon to a baking paper-lined baking tray and bake for 5 minutes or until just cooked. Remove from the oven and rest for 3 minutes.

5.Meanwhile, heat the remaining 1 tbs oil in a frypan over medium-high heat. Add the ginger and cook for 30 seconds or until fragrant. Add the spring onion and cook, stirring, for 1-2 minutes until slightly softened. Add the honey and bok choy, then cook for 1-2 minutes until leaves are wilted and stems are tender.

6.To serve, divide bok choy mixture among plates and top with salmon.
