Simple antipasto
Entertaining need not be stressful or time consuming with these simple antipasto.
Ingredients (9)
- 1 (about 70g) buffalo mozzarella or 2 bocconcini, broken into pieces
- 4 slices prosciutto
- 8 slices mild salami
- 2 tablespoons pesto
- 1/4 cup (60ml) extra virgin olive oil
- 400g can cannellini beans, rinsed, drained
- 8 cooked king prawns, peeled, deveined, tails intact
- 12 small vine-ripened tomatoes, roasted
- Grissini (breadsticks), to serve
Method

1.Divide cheese, prosciutto and salami between 4 serving plates. Mix pesto with oil, then toss 1 tablespoon of pesto mixture with beans. Add to plates with prawns and tomatoes. Drizzle with remaining pesto and serve with grissini.
