Start, perhaps, with a mixed sashimi set, its presentation like a work of art and its freshness and execution just as masterful; before moving onto the signature spicy tuna crispy rice featuring pan-fried sushi rice balancing a sliver of rosy raw fish lifted by a spice-spike kewpie mayonnaise.
Off the binchotan a David Blackmore 9+ full-blood wagyu crowned with Siberian Blackpearl caviar offers the ultimate in indulgence, but for a little taste of luxury without the exorbitant price tag, try the pork belly-like Dengakuman toothfish glazed in sweet, caramelised miso.

Set menus starting from $100 a head represent value for money, and there’s also the extravagant 20-course omakase for $240 per person showcasing everything from Borrowdale pork from Toowoomba cooked in Japanese black sugar to New Zealand snapper enlivened with a hint of horseradish.
