Perhaps start with the lobster dumplings, intense with XO sauce and lightened by lime, before moving on to the kingfish sashimi – the white fish finely sliced and flavoured with a citrusy ponzu and milk curd.

Mains extend from crispy pork hock with red vinegar, but it’s the beef cheeks braised in rock sugar and soy with black bean and chilli sauce that deserve total attention.

Desserts blend Asian ingredients with European techniques to create interesting and inviting fusions such as a pineapple roll cake with coconut cream and oolong tea ice cream.
