Bronte Road Bistro, Waverley.

The little bistro that could, Bronte Road Bistro is one of Sydney’s best-kept secrets – a venue the locals keep shtoom about (they want it for themselves), a place industry professionals love, but most people know little about. With service as friendly as dinner at your best mates, an open dining space and smart, no-frills adaptions of classic bistro dishes, it’s the sort of place you’d be glad to have on your street corner.

Co-owner Stewart Parsons knows why people dine out, for good times and quality food that doesn’t hurt the hip pocket. The bistro is jam-packed with families, couples and friends all tucking in. Co-owner and chef Matthew Barnett’s food will make you wonder when you’ll be back. Chicken liver parfait is served old school in a glass with jelly on top. It’s rich, velvety and big on the liver. Twice-baked Gruyere soufflé arrives sprawled over a plate, light and aerated and big on the cheese. Garfish is breathtakingly stunning, simply de-boned and split, put under the salamander and served with a saffron aioli. Pan-fried spatchcock sits on a cauliflower puree next to a salad of capers, parsley and green olive. Steak frites is served with café de Paris, and they’ve even resuscitated the classic crème caramel. Simple, honest and spot on.
