While Nobby Beach on the Gold Coast may be a long way from the cattle stations of Argentina, the Latin American-inspired barbecue fare at Fire Cue is bridging the geographical gap. The food at this busy bar-cum-restaurant is based around sharing plates cooked over charcoal and different hardwoods – think rump cap steak with cumin, oregano and red Peruvian chilli dressing, and pork spare ribs in a chipotle and lime glaze.
While there is no shortage of meat sizzling on the parilla (grill), when it comes to Argentine barbecue, asado is king, and Fire Cue’s rendition is so good is has become a signature – and for good reason. A whole lamb is pinned to a metal asado frame that is expertly moved around the fire for eight hours until roasted, tender and delicious. The likes of roasted lamb shoulder, or pork belly and barbecued Moreton Bay bugs require 48 hours notice, but abundantly fresh butterflied prawns can satisfy immediately – charred around the edges and roaring with a punchy guajillo chilli marinade that is balanced by a smashing guacamole.
The menu features more top-notch covers of Latin America’s greatest hits. Tacos are thin, lightly charred handmade corn tortillas topped with vibrant fillings, such as battered fish with chipotle mayo, coleslaw, radish and pineapple; while kingfish ceviche comes dressed with a Peruvian chilli sauce with pops of corn kernels, pomegranate seeds, and shavings of radish and golden beetroot.
Boasting a drinks list heavy with South American offerings and local craft beers well matched to the meaty menu, plus passionate and enthusiastic staff, Fire Cue is setting the Coast’s food scene on fire.
