15. Fred’s, Paddington

Are we really in a restaurant? That’s my first thought whenever I step into Fred’s.

The warm staff in neutral linens; the equally embracing dining room; the farmhouse kitchen with its open fire and overflowing bowls of seasonal produce. It’s a picture of bucolic bliss, and yet here we are on peak-hour Oxford St on a chilly Wednesday.

A large part of Fred’s magic was founding mother, Danielle Alvarez, who brought a Slow Food sensibility with her from San Francisco’s Chez Panisse. Co-head chef Hussein Sarhan (head chef since Alvarez’s departure) hand-delivers plates, extolling the pleasures of juicy, in-season scallops, or fresh-picked baby lettuce leaves.

Those scallops are diced into pearlescent cubes, tossed with candied citrus zest and served in the shell. Prawn ravioli with tomato butter sounds simple, but this isn’t your weeknight Latina pasta, folks. Textured seafood mousse encased in golden handmade pasta is doused in a slippery pink buttery sauce.

Sarhan’s effortless approach to tossing together seasonal ingredients plays out in meltingly tender, slow-cooked lamb shoulder with new-season celeriac and sauteed erbette spinach. Come for the warm fuzzy feeling that will stay with you well after the last bite of quince and apple frangipane tart.
