Forget the nightclub upstairs, Merivale’s new neon-lit eatery, MuMu, is where the party’s at.

The best seats in this vast 200-seater space are in the nosh pit around the open kitchen, where you’ll be privy to an impressive culinary performance, fire tricks and all. Headlined by rockstar chef Dan Hong, MuMu was inspired by a multi-stop trip through South East Asia.

First stop, Indonesia. Every table should order the sambal platter with an assortment of colourful krupuk crackers that taste just as crunchy as they sound. Hong pays tribute to his time as an apprentice at Longrain with a Thai starter of betel leaves filled with a toasty tangle of caramelised pork and shrimp with lemongrass, ginger and a slap of roasted chilli.

Hong’s famous Vietnamese steak tartare has been carried over from his Darlinghurst diner Ms G’s. Slices of raw beef are topped with crispy onions, finished with an unctuous egg yolk that binds everything together. The drinks list includes beers on tap, affordable wines by the glass and carafe, and tricked-up cocktails that will steal the show. MuMu stays open late, with dinner bookings available until 10pm. Now, that’s a nightclub we’re happy to line up for.
