Each course is inspired by a different region, either through a traditional ingredient or a time-honoured dish. Start your evening on the banks of Lake Como. It almost could be: The glass-enclosed restaurant teeters on the edge of the D’Albora Marinas; its gold-accented dining room affords glittering views of Pearl Bay and the bobbing pleasure craft beyond. Before you know it, you’re in Rome sipping on a carbonara cappuccino. Inspired by a certified Italian recipe fiercely protected by the locals, this subversive starter sees a warming cup of cream soup, dusted with guanciale powder and buttery bits of cured yolk. Next stop, Emilia-Romagna. Sample the region’s famous filled pasta through Pavoni’s bottoni – little liquid-parmesan-filled pasta buttons that burst in the mouth. It’s three silky caps to a bowl, each one cloaked in a fermented tomato consommé. From here, head west to Piemonte for wagyu battuta, the local steak tartare, which comes showered in earthy chestnut shavings and golden porcini crisps. You can either opt for matching wines or choose yourself from the award-winning list – sorted by region, rather than varietal – which includes offerings from all over the boot, from toe to tip.
