There are pubs, and then there are places like Sparkke at the Whitmore that really put food and drinks at the heart of everything they do.
With an onsite brewery and a growing selection of spirits made under their brand, Full Circle, Sparkke takes the finer things in life seriously. It’s a philosophy that flows through to its kitchen. Like the rest of this brewpub, the dining space has been given a modern makeover with industrial lighting, exposed bricks and ducts, neon lights and funky street art.
The menu includes plenty of nibbles and modern takes on pub classics – which pair perfectly with Sparkke’s focus on drinks. Take, for example, the humble cheeseburger, which is elevated by a chunky, tender beef patty dressed up with a zingy sauce and house-made pickle in a glossy bun.
Or Sparkke’s take on a seafood pie, where prawns and herring sit in a spicy Thai broth reminiscent of a red curry, topped with fingers of puff pastry perfect for mopping up the sauce. Housemade gnocchi might be partnered with a surprising mix of baked brie, macadamia and honeycomb.
And don’t miss the oozy chocolate pudding for dessert – topped with peanut butter ice cream and caramelised banana for something that’s just a little different.
