It’s a truism that one shouldn’t eat seafood away from the coast, but the usual rules don’t apply at Tali Wiru. Just trust that, if you’re one of the 20 diners to secure a booking, you’re in safe hands – outside in the desert, having travelled by 4WD bus, but in safe hands all the same. Though the $375 price tag is all-inclusive, dismiss all thoughts of naff tourist packages. It’s like dining in a dreamscape, with the sounds of the didgeridoo the sunset-painted sky fading
to black and sparkling with countless stars, the red sand underfoot – oh, and views of Uluru and Kata Tjuta. Then there’s the food: four courses with drinks, including canapés of kangaroo and quandong pie accompanied by gulguk (green ant) gin and tonic; entrees such as pressed wallaby with Davidson plum; and mains including Glacier 51 toothfish with bush honey-roasted heirloom carrots, beach succulents and bonito.
