Talented chef Pablo Tordesillas has brought his big-flavoured Spanish-cum-North African Mediterranean-accented cuisine to the big smoke.

A slow-cooked egg spills over fried cuttlefish, before toothsome WA octopus lands with an ajo blanco puree kissed by sumac.

Slivers of ox tongue get a kick out of anchovy and endive, while lamb breast cooked on the bone is damn delicious when partnered with chickpeas tossed in fermented butter.

Must eat: Broccoli, capers, colatura, chilli, egg
