When I think of April, I think of Anzac Day. And when I think of Anzac Day, I think of my nan. My family regularly attended Dawn Service with Nan, followed by a cuppa and some baked treats at the local RSL. Later in the day, I would march with Tewantin Primary School, proudly displaying Nan’s medals on my school uniform.
I loved helping Nan with her baking; I got to sample a lot of batters and doughs ahead of their cooking time and adored every minute of my time with her. In hindsight, her polite warnings not to eat too many ‘offcuts’ because I’d get a tummy ache were early signs of my gluten and wheat intolerance. Like almost all my recipes, this one is gluten and grain free, so as not to irritate sensitive stomachs.
Another very early memory I have of Nan is her sharing cups of tea with me. I was too little to have such a hot drink, but she’d make it weak and milky, tip some into the saucer to cool it down, then bring it gently to my lips for soft sips and great moments of so much love between us. I’ve created these Anzac-inspired bickies to honour this gorgeous moment.
