What exactly is black garlic?
Black garlic is white or purple garlic that has very slowly been cooked. It’s made by placing the garlic in a humidity-controlled, 60-77°C environment for 30-90 days turning the cloves black and into a soft, spreadable texture. It has a unique sweet flavour, similar to dates and treacle. And when it comes to using it in cooking, gently warm (don’t fry!) black garlic for the best flavour.
Serving suggestions:
Smear it onto hot sourdough or mash it into aioli and butter.
