Quite frankly, you had us at self-saucing pudding.
Ingredients (18)
- 1¼ cups (185g) plain flour
- 1 tsp cinnamon
- 2 tsp baking powder
- 1¼ cups caster sugar
- 100g white chocolate, grated
- 50g butter, melted, cooled
- 1 tsp vanilla bean paste
- 1 tsp ground ginger
- 1 egg, beaten
- 1 cup (300g) apple sauce
- 2 apples, thinly sliced (we used a mandoline)
- Juice of 1 lemon
- Ice cream, to serve
Sauce and topping
- 1⅓ (330ml) cups milk
- 100g white chocolate, grated
- ¼ cup (35g) plain flour
- ½ cup (110g) caster sugar
- 1 tsp ground cinnamon

1.Preheat oven to 180°C. Grease a 1.5L (6-cup), 6cm-deep, 20cm ovenproof pan or dish (if using a pan, ensure it is non-stick).

2.Sift flour, cinnamon, baking powder and ¾ cup sugar into a bowl, then add the chocolate, butter, vanilla, ginger, egg and apple sauce, and stir until combined. Spoon mixture into prepared dish and smooth surface with a spatula.

3.For the sauce, combine milk and chocolate in a small saucepan over medium heat. Stir over medium heat until chocolate is melted, then remove from the heat. For the topping, combine flour, sugar and cinnamon in a bowl. Sprinkle over pudding. Pour sauce over pudding, over the back of a large metal spoon.

4.Bake for 35-40 minutes or until a skewer inserted halfway into pudding comes out clean.

5.Meanwhile, lay apples over a large baking tray and brush with lemon juice. Sprinkle over remaining ½ cup sugar and use blowtorch to brulee the tops. Alternatively, place under a hot grill.

6.Remove pudding from oven, top with apple slices and serve immediately with ice cream.
