Method

  • 1.
Preheat oven to 180°C. Grease a 1.5L (6-cup), 6cm-deep, 20cm ovenproof pan or dish (if using a pan, ensure it is non-stick).
  • 2.
Sift flour, cinnamon, baking powder and ¾ cup sugar into a bowl, then add the chocolate, butter, vanilla, ginger, egg and apple sauce, and stir until combined. Spoon mixture into prepared dish and smooth surface with a spatula.
  • 3.
For the sauce, combine milk and chocolate in a small saucepan over medium heat. Stir over medium heat until chocolate is melted, then remove from the heat. For the topping, combine flour, sugar and cinnamon in a bowl. Sprinkle over pudding. Pour sauce over pudding, over the back of a large metal spoon.
  • 4.
Bake for 35-40 minutes or until a skewer inserted halfway into pudding comes out clean.
  • 5.
Meanwhile, lay apples over a large baking tray and brush with lemon juice. Sprinkle over remaining ½ cup sugar and use blowtorch to brulee the tops. Alternatively, place under a hot grill.
  • 6.
Remove pudding from oven, top with apple slices and serve immediately with ice cream.
