Bailey's chocolate mud cake
The addition of Baileys give this decadent chocolate cake a rich, creamy flavour and just a bit of Irish magic.
Ingredients (15)
- 100g dark (70%) chocolate, chopped
- 150g unsalted butter, chopped
- 100g caster sugar
- 100g dark brown sugar
- 3 eggs
- 1/2 cup (50g) cocoa powder
- 170g plain flour, sifted
- 11/ 2 tsp baking powder
- 1/ 2 tsp baking soda
- 1/4 tsp cream of tartar
- 150ml Baileys Irish cream
Bailey's Icing
- 100g unsalted butter, softened
- 100g cream cheese, at room temperature
- 150g pure icing sugar, sifted
- 2 tbs Baileys Irish cream

1.Preheat oven to 160°C. Grease and line four 10cm x 7.5cm-deep round cake pans. Melt chocolate in a heatproof bowl set over a pan of simmering water (don’t let bowl touch water). Set aside to cool.

2.Beat butter and sugars in the bowl of a stand mixer until thick and pale. Add eggs, 1 at a time, beating well after each addition. Add chocolate, beating to just combine.

3.Fold in dry ingredients, then stir through Baileys. Divide batter among pans. Bake, swapping pans halfway, for 30-35 minutes until just cooked and a skewer inserted comes out clean.

4.Cool in pans for 5 minutes, then turn out onto a wire rack to cool completely.

5.For the icing, whiz all ingredients in a food processor until smooth. Spread icing over cooled cakes to serve.
