Baked green tea custards

These cute little custards have the unmistakable taste of green tea. Serve with a single fresh fruit, such as mango, on the side.
Ingredients (5)
- 400ml milk
- 2 tablespoons caster sugar
- 2 teaspoons green tea powder (matcha)
- 4 eggs
- Sliced mango or other fruit, to serve

1.Preheat the oven to 160°C.

2.Gently heat milk and sugar in a saucepan, stirring, over low heat until sugar dissolves. Remove from heat, whisk in tea powder, cool for 5 minutes.

3.Whisk eggs in a large bowl until combined. Slowly pour in milk mixture, whisking until combined. Strain mixture into a jug, pressing down on the dregs to push through any undissolved powder.

4.Pour the custard into 4 small ovenproof Asian teacups and place in a roasting pan. Fill the tray with enough hot water to come halfway up sides of teacups. Bake for 20-25 minutes until custards are set, with a tiny shimmer on top when wobbled.

5.Serve custards, hot, warm or at room temperature, with fruit.
