The best bruschetta
It's a big call, but we think it really is the best!

Ingredients (6)

  • 2 red capsicums, roasted, peeled, finely diced
  • 1/2 tbs chopped rosemary leaves, plus a few extra sprigs to garnish
  • 1 tbs olive oil, plus extra to drizzle
  • 4 slices ciabatta bread
  • 1 garlic clove, halved
  • 125g goat’s cheese

Don't forget you can add these ingredients to your Woolworths shopping list.

Method

  • 1.
    Place the capsicum in a large bowl and add the rosemary and olive oil. Season with salt and pepper and toss to combine. Set aside.
  • 2.
    Place the ciabatta in the toaster and toast until golden. Rub ciabatta with the garlic and drizzle with a little extra olive oil.
  • 3.
    Spread the goat’s cheese over the ciabatta and top with capsicum mixture. Serve immediately.
