Charred pineapple salad
This salad brings freshness and sweetness to any meal. Recipe by Mary's bar duo Jake Smyth and Kenny Graham.
Ingredients (10)
- 2 tbs caster sugar
- 1/4 cup (60ml) olive oil
- 1/2 pineapple, cored, cut into 6 wedges
- 1/2 cup (120g) sour cream
- Juice of 1/2 a lemon
- 1/2 white cabbage, finely shredded
- 2 each red and green apples, cored, thinly sliced into rounds
- 4 celery stalks, trimmed, thinly sliced on the diagonal
- 1 cup (100g) walnuts, chopped
- Baby parsley leaves, to serve

1.Heat a barbecue or chargrill pan to medium-high heat.

2.Combine sugar, oil, 1 tbs salt and 1 tsp pepper in a bowl and brush over pineapple. Grill pineapple, turning halfway, for 12 minutes or until charred and sticky. Allow to cool slightly.

3.To make the dressing, combine sour cream and lemon juice. Season.

4.To serve, layer cabbage, apple and celery over a large platter. Top with walnuts and spoon over dressing. Finish with pineapple pieces and baby parsley.
