Yabbies with dill mayonnaise
Crayfish, common in Sweden, are the traditional choice for this dish, but yabbies, which are widely available in Australia, have been substituted by Rachel Khoo for her recipe here.

Ingredients (8)

  • 1 slice white bread, crusts removed
  • 1/4 cup (60ml) milk
  • 1/2 bunch dill, chopped
  • 1 garlic clove, crushed
  • 3 egg yolks
  • 300ml sunflower oil
  • 1/4 cup (60ml) lemon juice
  • 3kg cooked yabbies* (see notes below)

Method

    Soak the bread in the milk for 10 minutes, then squeeze to remove excess liquid. Transfer bread to a food processor with the dill and garlic, then whiz until a smooth paste. Add the egg yolks and whiz to combine. With the motor running, slowly add the oil in a thin, steady stream until a thick mayonnaise.

    Transfer to a bowl, then stir in lemon juice and season with sea salt. Serve the dill mayonnaise with the yabbies.
