Ingredients (12)

  • 1 green jalapeno, finely chopped, or 1 tbs chopped pickled jalapeno, patted dry with paper towel
  • 200g sourdough bread, crusts removed, torn
  • 2 tbs extra virgin olive oil
  • 1/4 cup (20g) finely grated pecorino
  • 4 baby cos lettuces, halved lengthways
  • Finely chopped chives, to serve

Buttermilk dressing

  • 250g sour cream
  • 250ml buttermilk
  • 1/2 cup (40g) finely grated pecorino
  • 3 tsp apple cider vinegar
  • 1/2 tsp caster sugar
  • 1/2 tsp garlic powder

Method

  • 1.
    Preheat the oven to 140°C. Grease a large baking tray and line with baking paper.
  • 2.
    Combine jalapeno and bread on the prepared tray. Bake for 40 minutes or until bread is crisp. Drizzle with oil and sprinkle with pecorino, then toss to coat. Set aside.
  • 3.
    Meanwhile, for the buttermilk dressing, whisk all ingredients in a small bowl until smooth.
  • 4.
    Arrange lettuce halves on a serving platter. Drizzle with buttermilk dressing and scatter with jalapeno crumb and chive to serve.
