Cucumber, capsicum & feta rolls
The roasted capsicum and creamy feta cheese coated with a thin layer of cucumber provides the perfect balance of flavours to stun your guests.

Ingredients (4)

  • 1 red capsicum
  • 1 tablespoon olive oil
  • 1 Lebanese cucumber
  • 200g firm feta, cut into 1.5cm cubes

Method

  • 1.
    Preheat oven to 200°C. Place capsicum on a baking tray, coat in oil and roast for 15-20 minutes until soft. Place in a plastic bag to steam for 10 minutes, then peel. Cut into 2cm squares, discarding seeds.
  • 2.
    Using a vegetable peeler or mandoline, cut 6 long strips from either side of the cucumber until you reach the central seeds. Place the strips on a board (halve if long) and top each with a square of capsicum and a cube of feta.
  • 3.
    Roll up and secure with a toothpick.
