The 'everything cookie' ice cream sandwiches that'll change your life

Ingredients (11)
- 250g unsalted butter, softened
- 400g dark brown sugar
- 2 tsp vanilla extract
- 2 eggs
- 2 cups (100g) salted pretzels
- 1 1/3 cups (200g) plain flour, sifted
- 1 1/3 cups (200g) self-raising flour, sifted
- 1 cup (120g) milk powder
- 300g dark chocolate chips
- 2 tbs finely ground coffee
- Mixed ice cream flavours, to serve (we used strawberry, chocolate and pistachio gelato)

1.Using a stand mixer fitted with the paddle attachment, beat butter and sugar until thick and pale. Add vanilla and eggs, and beat until combined.

2.Add pretzels and beat until roughly crushed. Fold in flours, milk powder, chocolate chips, ground coffee and 1 tsp salt flakes.

3.Form into a ball, enclose in plastic wrap and chill for 1 hour to firm up.

4.Preheat oven to 180°C. Line 4 large baking trays with baking paper. Divide dough into 24 equal pieces.

5.Roll into balls and divide among the trays, leaving a 4cm gap between each. Flatten slightly, then in 2 batches, bake, swapping trays halfway, for 12 minutes or until golden. (Chill the second tray of cookies while the first batch cooks.) Set cookies aside to cool completely.

6.Sandwich scoops of ice cream between two cookies to serve.
