Matt Preston's kefir bircher muesli
“Before there was dry muesli, there was Bircher muesli - a dish made famous by Swiss raw food champion Dr Maximilian Oskar Bircher-Benner at the start of the 20th century. It wasn’t originally a breakfast dish; it was served as a pre-meal snack. Where Dr Max used cream or condensed milk – and yoghurt, milk, plant-based ‘mylk’ or apple juice is the usual go-to now – we’re using probiotic-laden kefir here. Otherwise, we’re pretty close to his original, with ingredients abounding in probiotic and prebiotic benefits. More importantly, it tastes good!” – Matt Preston. You'll need to start this recipe the night before. For a nuttier-tasting Bircher, use 70% rolled oats and 30% steel-cut oats. However, the end result won’t be as creamy.
Chia seed granola with berries
This recipe works best when berries are at their peak – not only do they taste better, but they’ll be less expensive, too! Not all coconut yoghurts are created equal. Some are overloaded with sugar and too many ingredients, so look out for a good-quality, delicious-tasting one. The ingredients in this recipe are relatively expensive but worth, it as granola is perfect for breakfast or a snack. It lasts for about two weeks in an airtight container and would make a great gift, too. As granola is so portable, I like to eat a cooked breakfast at home and save granola for the mornings when I need something ‘to go’. Use an empty jar and layer the granola with yoghurt and some fresh berries or roasted fruit, or grate over some apple or even carrot. You can play around with spices as well: ground cinnamon adds a natural sweetness, but you could swap it for ground cardamom, ginger or nutmeg, says Melissa.
