Pantry bars
We used nuts and seeds to make our pantry mix, but the goal is to empty those packets, so feel free to experiment with dried fruit and cereal such as rice puffs.
Ingredients (5)
- 750g ‘pantry mix’ – leftover nuts, cereal or dried fruit (we used pistachios, almonds, cashews, macadamias, sesame seeds and hazelnuts)
- 1 1/2 cups (375ml) runny honey
- 1 tsp vanilla extract (optional)
- 1/2 tsp ground cinnamon (optional)
- 2 tsp white sesame seeds
Don't forget you can add these ingredients to your Woolworths shopping list.

1.Grease a 20cm x 30cm lamington pan and line with baking paper, allowing 5cm to overhang.

2.Place pantry mix in a food processor and pulse until coarsely chopped. Transfer to a heatproof bowl with 1 tsp salt flakes. Place honey in a saucepan over medium heat. Bring to boil, then cook, without stirring, for 3 minutes or until it reaches 140ºC on a sugar thermometer. Add vanilla and cinnamon, if using, and stir to combine.

3.Working quickly, combine honey mixture and pantry mix. Press into prepared pan with a spoon and scatter with sesame seeds. Cool to room temperature, then cut into bars. Store, between pieces of baking paper, in an airtight container at room temperature, for up to 2 weeks.
