Quick mezze plate with hummus

Ingredients (10)
- 1/4 cup (60ml) red wine vinegar
- 100ml extra virgin olive oil
- 1 red and 1 yellow roasted capsicum, cut into strips
- 100g marinated feta, crumbled
- Black olives and warm pita bread, to serve
Hummus
- 425g can chick peas, rinsed, drained
- 1 garlic clove, chopped
- 1/4 cup mint leaves
- 1 tbs red wine vinegar
- 100ml extra virgin olive oil, plus extra to drizzle

1.For the hummus, place the chickpeas in a food processor with garlic, mint leaves and red wine vinegar. Season with salt and pepper, and process to combine. With the motor running, gradually add the oil until the mixture forms a smooth paste. Place the hummus in a serving dish and drizzle with olive oil.

2.Combine the red wine vinegar and olive oil in a small bowl, then season with salt and freshly ground black pepper to taste.

3.Arrange the capsicum on a platter, top with crumbled feta and drizzle with the dressing. Serve with the hummus, black olives and warm pita bread.
