Ember-baked potatoes
Traditionally in Sweden, fish and game are smoked, but Rachel Khoo's smoked potatoes make for an interesting vegetarian alternative or side dish. Make sure you have all the windows open when smoking indoors.

Ingredients (3)

  • 600g chat potatoes, washed
  • 1 cup oak chips* (see notes below)
  • 3 tsp juniper berries* (see notes below)

Method

  • 1.
    Place the potatoes in a saucepan of cold, salted water and bring to the boil. Reduce heat to medium and cook for 10 minutes or until tender. Drain, then halve any larger potatoes, leaving small ones whole.
  • 2.
    Line a wok or heavy cast-iron pan with foil and spread the oak chips and juniper berries over the bottom. Place a wire rack inside the wok, then top with potatoes, placing halved ones cut-side down.
  • 3.
    Cover wok with a double layer of foil, sealing tightly. Place over high heat and smoke for 5-7 minutes until pale orange. Serve with a good sprinkle of sea salt.
