The pork in this sandwich is marinated in treacle and twice cooked - complementing the coleslaw made with Brussels sprouts and red onion.

Ingredients (9)

  • 2 (400g each) pork fillets
  • 2 tablespoons treacle
  • 1 tablespoon olive oil
  • 1 baguette, cut into 4

Brussels sprout slaw

  • 1/4 cup (75g) whole-egg mayonnaise
  • 1 teaspoon mustard
  • 1 tablespoon white wine vinegar or apple cider vinegar
  • 200g Brussels sprouts, thinly sliced
  • 1 red onion, thinly sliced

Method

  • 1.
    Preheat oven to 180°C. Brush the pork fillets with treacle, season and set aside for 10 minutes to marinate.
  • 2.
    Heat the oil in an ovenproof frypan over medium heat. Cook the pork, turning, for 5-7 minutes until caramelised, then transfer to the oven for 10 minutes or until cooked through. Remove and set aside, loosely covered with foil, for 5 minutes to rest, then thinly slice.
  • 3.
    Meanwhile, for the slaw, combine the mayonnaise, mustard and vinegar in a bowl. Add sprouts and onions, then season and toss to combine.
  • 4.
    To serve, divide slaw among rolls and top with pork and pan juices.
