Vegan chocolate mousse with berries and pistachio
There are lots of recipes for vegan chocolate mousse, some using avocado and many using chia or avocado cream, but would you believe the liquid from a tin of chickpeas can be whisked to stiff peaks and made into a mousse? Crazy but true,” says Tobie.
Ingredients (6)
- 80g dark vegan chocolate, chopped
- 2 tbs rice malt syrup
- 1 tsp vanilla extract
- 170ml reserved water (aquafaba) from 1 x 400g can chickpeas
- 200g raspberies
- 80g chopped pistachios

1.Place chocolate, rice malt syrup and vanilla in a heatproof bowl set over a saucepan of gently simmering water (don’t let the bowl touch the water) and stir until chocolate is melted and mixture is combined and cool.

2.Using an electric whisk, whisk aquafaba to stiff peaks. Add one-quarter whipped aquafaba to melted chocolate, stirring until combined. Add chocolate mixture to remaining aquafaba and gently fold to combine. Divide among six 350ml serving glasses and chill overnight.

3.Top with the raspberries and pistachios to serve.
