The new espresso martini, for your Friday night
This summer, it's all about the espresso vodka pour-over.
Shannon Bennett says his vodka pour-over, one the signature drinks at Melbourne’s Lui Bar, is easier and quicker to make than a standard espresso martini.
“This is one of my favourite cocktail recipes; measurements aren’t crucial and you can use your favourite vodka,” he says.
“You need to use ristretto or quite strong coffee, and Licor 43, which is a spicy vanilla-based liquer with a hit of orange. You can also substitute with Galliano.”
“You just pour the coffee into a shaker with the alcohol, and pour it over crushed ice. Go slowly and work around the ice, to just to really cool it down. Give it the ice strainer a good tap, and there you have it.”

For a Christmas twist, serve it alongside a sliver of panforte.
Or with the cinnamon crumble cakes served alongside this liquid tiramisu.
And finally, with these espresso madeleines for the ultimate double-shot ending to a dinner party.
