A fountain flowing with five gallons of hot fudge, a seafood bar weighing almost 200kg (including more than 1,300 oysters) and a individually-plated chocolate layer cakes with banana ice cream, Speculoos and chocolate biscuits.

American super chef and Oscar’s caterer Wolfgang Puck has gone all out for this year’s 88th Annual Academy Awards (it’s his 22nd consecutive year as caterer), with more than 50 different dishes for all the celebs, which will be served up by a 350-strong culinary team.

Puck generally sticks to a comfort-food themed menu – think mac and cheese, ribs and old school favourites – paired with Piper Heidsieck champagne.

“We have some new things, too, like the Alaskan king crab this year with ginger and black beans, so there’s new and old stuff,” he told People magazine. “We also have a whole array of vegetables, little ahi pokes, yellowtail sashimi, so something for everybody.”

John Travolta loves the mac and cheese, Charlize Theron goes gaga over the smoked salmon pizza, and Clint Eastwood is partial to a pot pie, Puck has previously told media.

So what’s on the menu this year?

Pre-show hors h’oeuvres

Things start out in safe territory, with smoked salmon mousse served on cucumber rounds, shrimp cocktails and a Chinese chicken salad on wonton crisps. Whip up your own version using the salad recipe (just chop everything a bit finer) and fry some wonton wraps to act as a base.

Cocktail bites

Again, more of old-school favourites here, with deviled eggs, pizza, home-made pretzels and mini burgers. Whip up these sliders for your guests.

Appetisers

The cold options include an almond and white grape gazpacho (a favourite of Gwyneth Paltrow, apparently) and while caviar-topped baked potatoes, ancient grain risotto and truffle-laced chicken pot pie are all served hot. You can serve our ancient grain salad hot or cold.

Seafood and sushi bar

Ahi poke, a Hawaiian speciality of thick diced raw tuna, usually seasoned with soy, sesame oil and spring onions, is one of the hottest dishes in America right now. Fresh, healthy and light on calories, we think the celebs will love it (you can replicate it at home with Adam Liaw’s delicious recipe below). Stone crab claws, Maine lobsters and big eye tuna will also load up the raw bar.

Chocolate dessert buffet

Puck has a seriously long list of hand-made candies and treats to dip into that flowing hot fudge fountain. Forbes reported the full list, including lemon meringue tart lollipops, tiramisu push pops, strawberry and white chocolate rice puffs, all kinds of cookies, brownies and meringues, plus freeze-dried fruit lollipops and beautiful classic pastries.
