When he's not in the kitchen at Sydney's luxe CBD dumpling den, Mr Wong, he's feeding his insatiable sneaker obsession. Here's what the Merivale executive chef is coveting this month.

Mr Wong of course!

Top tipple?
To set the mood at a party, I always start with Champagne- Ruinart Blanc de Blancs.

What’s your weapon of choice in the kitchen?
My weapon of choice in the kitchen is a Microplane – I love how finely it grates.

Current inspiration?
What’s inspiring me at the moment? Everything coming out of Japan.

Best for small bites?
I forgot how good jaffles are! I’m buying a jaffle maker tomorrow.

Music to cook to?
Listen to rap music when I cook: Jay Z, Drake, Mobb Deep, Snoop Dogg, Rick Ross… the list goes on.

Most memorable meal?
My most memorable meal was dining at Sawada in Tokyo. Simply the best sushi and sashimi I have eaten.

Local you can’t live without?
Most days, you can find me in Chinatown, shopping at the fresh food markets.
