The empire that is the “Bills” restaurants began with the original Bills launched in 1993 in Sydney’s Darlinghurst. Since then, he’s launched multiple eateries by the same name in Australia, Japan, the UK, Hawaii and Korea.
His philosophy of simple, tasty food has been seen in television series (winning an ASTRA award in 2005 for Favourite New Presenter), books, and in stints as a food columnist.
Bill and his family divide their time between Sydney and London.
