Hospitality kingpin Chris Lucas’s Japanese-eating, French wine-sipping wonderland Kisumé (Japanese for a pure obsession with beauty) has many moving parts. Set over three levels, this ambitious fine diner comprises a chablis bar, New-York-style sushi counter, basement restaurant, exclusive private dining and 12-seat chef’s table, Kisumé is a modern Japanese restaurant that’s unmistakably Melbourne but with added New York sass.

On May 5, step into Champagne Ayala’s refined world at Kisumé. Champagne specialist Laurence Alamanos will lead the intimate event celebrating the House’s chardonnay-forward style. Enjoy five courses from Kisumé’s kitchen – including crispy rice with Siberian caviar, Sydney rock oysters, aged duck breast and a closing craquelin au choux with Comté – paired to five expressions across the Ayala range, from the approachable Brut Majeur NV through to the prestigious La Perle 2015.
