The star ingredient is native rosella flowers.

If you feel like your G&Ts are missing something – maybe a splash of red or purple colour – then this is the gin for you.

Four years after Husk Distillers released their colour-changing butterfly pea flower gin, they’ve followed up with its ruby-hued sister.

The new Ink Sloe & Berry Gin infuses a London dry-style gin with Australian native botanicals. The vibrant jewel colour and sweet, tart flavours can be attributed to rosella flower, a native hibiscus found in the tropical parts of Australia. Other ingredients include Davidson plums, raspberries, blackberries, blueberries, cherries and locally-grown jaboticaba (Brazilian grape) which add a pleasing mid-palate softness to the gin.

Head distiller Quentin Brival said: “Ink Sloe & Berry Gin starts with a simple, traditional recipe. We distil with juniper berry, coriander seeds, angelica root and liquorice then we infuse the gin with sloes, plums and berries – the result is just the right balance of sweet and tart.”

The new Ink Sloe & Berry Gin is priced at $72 for a 700ml bottle and is available to buy online, from their Tumbulgum cellar door, as well as Dan Murphy’s.
