Never mind that it’s winter and we can’t physically go anywhere, Sydney distillery Poor Toms has just released a new piña colada gin so you can take a tropical holiday from home.

Trading up the rum for gin, the new tipple pairs juniper with beachy botanicals including pineapple, coconut, lime and pandan. Expect candied pineapple and sea spray on the nose, followed by coconut rough and briny soaked juniper and lime on the palate. “If a young George Clooney had spent his gap year in Ibiza, it would taste like this,” the description reads. Serve it straight over ice or mix it with soda, tonic or juice with a cocktail umbrella (not negotiable).

The idea of a piña colada gin was first dreamed up by Poor Toms some two years ago. “Like many people during the crisis we have turned our hand to something we’ve always had at the back of our minds, but rather than baking sourdough or writing a novel, we invented a very silly gin,” said Sean McGuire, the creative head of drinks at Poor Toms.

There’s not a lot of pina colada gins out there and that’s because pineapple and coconut are notoriously difficult to distil. To make it all possible, the pineapple is juiced before distillation, while the skins are retained and steeped overnight to extract as much flavour as possible, some of the flesh is also dehydrated before distillation to intensify the natural pineapple aroma. Toasted coconut is both distilled and fat-washed in coconut oil. Poor Toms is calling it their most labour-intensive gin, yet hence why there are only 5000 date-stamped, individually numbered bottles available.
