Black Star Pastry has teamed up with acclaimed Sydney cocktail bar PS40 to create a range of cake-inspired cocktails that will bake your day.
The gin-novative drinks were inspired by a trio of Black Star Pastry treats, including the Strawberry Watermelon, Japanese Forest and Pistachio Lemon Zen cakes.
To create the cake cocktails, PS40 owner and award-winning bartender, Michael Chiem, spent weeks binging on the miniature gateaux (research, obviously) to discover a way to transfer the fragrant flavours to liquid form.

The cocktail version of the famed Strawberry Watermelon Cake is made from a gin base combined with fresh strawberry, rose petal tea and clarified rose-scented cream to create a likeness that Chiem describes as “what we imagine it would taste like if we threw Black Star Pastry’s iconic Strawberry Watermelon Cake into a gin still.”
No need to venture out of the house, Black Star Pastry has launched a Sydney-wide home delivery service, so you can have both cakes and cocktails delivered to your door.
Black Star Pastry’s General Manager, Josef Murray, said: “The collaboration was born out of two things – a mutual respect for the way each brand innovates on flavour combinations and technique… and the need for a good drink!”

The limited-edition bottled cocktails are available in a three-pack ($80) with each 250ml bottle designed to serve two. Select your own slices or opt for the Cake and Cocktail Combo ($125), pairing the three bottled cocktails with double-sized slices of the Strawberry Watermelon, Pistachio Lemon Zen and Japanese Forest cakes.
