Attention collectors. Four Pillars has expanded its Rare Dry Gin family to include two new citrusy additions, a Rarer Dry Gin and Rarest Dry Gin.
All three Rare Gins share the same base botanicals, which include juniper berries, Tasmanian pepperberry, lemon myrtle, cassia, star anise, cardamom, coriander seeds, lavender and angelica root.
On top of that, the Rare Dry Gin is made with fresh organic oranges, the all-new Rarer Dry Gin is spiked with yellow yuzu while the Rarest Dry Gin is laced with locally picked green bergamot.
Given the name, it should come as no surprise to learn that these are extremely limited edition gins, with just 4,000 bottles of Rarer Dry Gin 3,000 bottles of Rarest Dry Gin available.

The addition of yuzu in the Rarer Dry Gin is said to add mandarin, lemon and cumquat aromatics and flavours to the tipple. Four Pillars recommend drinking the bright, sunny gin in a G&T or mixing it with soda, specifically StrangeLove Yuzu Soda, to create a refreshing highball cocktail.
In the Rarest Dry Gin, the green bergamot adds herbaceous and bitter orange notes to the aromatics and palate, which works well in a G&T with a rosemary or thyme garnish.
As with the Rare Dry Gin, Four Pillars have upcycled the leftover distilled fruit into a yuzu and bergamot gin marmalade, which is also available to purchase in limited supply. Not just a toast topping, the new marmalade goes well on a cheese platter or paired with pâté. It’s also rare, with just 800 jars available.
The Four Pillars Rarer Dry Gin (yuzu) and Rarest Dry Gin (bergamot) are priced at $75, while the Yuzu and Bergamot Shred Marmalade is $12 a jar from fourpillarsgin.com and the Gin Shops at the Four Pillars Healesville Distillery and Four Pillars Surry Hills Laboratory from Saturday, September 11.
