Australia’s most Instagrammed cake is now a soft serve

The iconic watermelon, almond and rose layer cake from Black Star Pastry has been churned into an ice cream.

The frozen treat was first created by Christopher Thé two years ago for the Smooth Festival of Chocolate, before returning for an encore at the Night Noodle Markets. Now you can get your hands on the watermelon whip all year round at Black Star Pastry in Rosebery.

Inspired by the fragrant cake, the ice cream is made from a dual twirl of rose-scented vanilla and strawberry and watermelon soft serve, made from the cake’s leftover fruit.  Its served in either a rose pink or pistachio waffle cone and topped with crushed pistachio nuts and dried rose petals.

Melburnians will also get a chance to try both the cake and the whip when Black Star Pastry open their first permanent bakery in Melbourne this September.
