Mike and Mia Russell of Baker Bleu are teaming up with restaurateur Neil Perry to open their very first bakery in Sydney.

The new home of baked goods will land in Double Bay, next door to Neil Perry’s restaurant Margaret, and opposite to Guilfoyle Park.

Baker Bleu is famed for its long-fermented sourdough loaves, chewy New York-style sourdough bagels and glossy challah scrolls. They also make a damn fine pastry, from croissants and pain au chocolat to a barberry and pistachio escargot. The Sydney store will offer the full gamut of grainy goodness, including Roman-style pizza slices in addition to a curated grocery offering.

The newly developed site spans 260 square metres and will offer outdoor dining for customers to sit with a coffee and croissant.

The new Double Bay Baker Bleu marks the fourth venue in the family, with the OG bakery in Elsternwick (Melbourne), a production space in Caulfield North, and a third site in Hawksburn village. The bakery also supplies top Melbourne restaurants like Attica, Cutler & Co, Di Stasio, and Cumulus.

Baker Bleu Sydney is slated to open early in 2022.
