Few restaurant partnerships in Sydney are as exciting as the Brent Savage and Nick Hildebrandt double-whammy. The renowned chef and wine whisperer’s CBD gem, housed in the elegant Radisson Blu Plaza Hotel, oozes industrial chic, from the floral green mural down to the grey leather banquettes.

This is a place where you can eat, drink and be merry. Snack on inventive Australian fare like WA marron refreshed with fermented blood orange and a cultured cream, or the more substantial Jack’s Creek F1 wagyu rump cap with Jerusalem artichoke and caramelised yoghurt. An olive oil ice cream with lactose curd and pineapple beer is equal parts inventive and delicious.

Hildebrandt’s world-class wine list is an education in itself – he’s won just about every gong in the industry thanks to his carefully compiled, eclectic collection of over 1,000 drops.

If you’re in a hurry, the Bentley Bar has your business lunch, post-work or pre-theatre bite and a drink sorted. Otherwise, choose from a la carte, tasting and vegetarian menus, with private dining rooms also on offer.
