Skip the bakery, you can now get your favourite sponge cake in ice cream form. That’s right, gelato giant Messina has just launched a luxe lamington tub, and it’s a serious upgrade from your nan’s recipe.

The new flavour trades out the sponge filler for milk chocolate and coconut gelato, which is smooshed with house-made lamingtons and topped with coconut mousse and raspberry gel. The ice cream log is then glazed in chocolate and sprinkled with desiccated coconut.

To get your hands on the limited edition tub, simply order from the Messina site, then choose a day for pick-up from this Friday, November 27 – Sunday, November 29. The tub is available to collect from all stores nationwide, except The Star in Sydney.  Tubs are priced at $30 each and contain one litre of ice cream.
