Tucked away on Albion Street in Surry Hills, Gildas is chef Lennox Hastie’s homage to the Basque country – a stylish little sister to the fire-powered Firedoor.
Here, the mood is warm and intimate, the menu leans into simple ingredients and precise techniques, and the hero is the gilda, the iconic skewered pintxo of olive, anchovy and pepper. Hastie’s approach, honed from his time in Spain’s famed grill houses, brings a rustic elegance to every bite and sip.
This May, as part of American Express delicious. Month Out, Gildas is turning the spotlight on Golden Hour: a new early-evening ritual celebrating good drinks, great company and the slower pace of a Basque afternoon.

From Wednesday to Saturday, you can enjoy a Clarita, a refreshing blend of tequila, triple sec, bitter curaçao and lemon for just $12.
Designed to pair beautifully with Gildas’ selection of pintxos and plates, it’s a zesty kickstart to your evening.
Golden Hour runs from 5–6.30pm on Wednesdays and Thursdays, and from 3–5.30pm on Fridays and Saturdays.
