Forget Byron, a breezy new diner on North Cronulla Beach is set to be your new favourite summer destination.

Inspired by The Hamptons, The Pines reveals a crisp minimalist space with high ceilings and wood-panelled walls, adorned with artworks and lush greenery – it’s the holiday home you’d always wished you’d had.

After a quick swim, head to the Après Beach Bar for an aperitif before moving into the restaurant for a long leisurely lunch with views across the water.

Former Becasse chef James Metcalfe heads up the kitchen, with a menu that focuses on classic bistro dishes. The line-up includes some of Australia’s top producers, such as the Rangers Valley sirloin on the bone to Humpty Doo barramundi with asparagus, peas and a roast chicken jus. There’s also hand-picked Noosa spanner crabs with celery and apple, and braised Milly Hill lamb shoulder with roast carrot puree and zucchini blossoms.

Former Rockpool and Merivale sommelier Chris has put together the beverage program, with a selection of signature cocktails and an impressive wine cellar featuring over a thousand new and old world wines.

After lunch, retire to The Pines Lounge where you can sip on a smoked cocktail and enjoy a chocolate cigar, before heading back to the beach for a final dip.
