Expect luxe toppings like bug meat and saltbush with add-ons like white truffle and caviar.
The restaurateurs behind Bentley, Monopole and Cirrus Dining have just opened a laidback pizza parlour in Potts Point.
Just don’t expect to find the usual capricciosa or quattro formaggi. Brent Savage’s menu trades up the classic Italian toppings for flavour combinations inspired by the Bentley Group’s fine diners. “We basically just went with things we liked to eat and that we knew would work well on a pizza,” Savage said.
The result is crisp sourdough bases topped with Olagasti anchovies with red piquillo peppers, or possibly Western Australian octopus with ‘nduja salami paste and green chilli salsa. For surf and turf fans, there’s the ham and clam pizza with parsley and capers.

If you want to dial up the luxe, you can also “pimp your pizza” with bougie add-ons like bottarga, white truffle, sea urchin and black pearl beluga caviar.
The short one-page menu also includes a handful of simple starters and salads, as well as “crust dips” such as parmesan custard and whipped mullet roe, where you can literally dip your uneaten crusts. *Mind blown*.
The new venue, which takes over from Monopole on Macleay Street, has been given a shiny update by Melbourne artist Ash Keating. In place of the black-on-black, Ash has layered the site with spray-painted shades of silver, pink, purple and blue. “It’s definitely lightened the place up a bit,” Savage said.
As for the drinks menu, co-owner Nick Hilderbrand has managed to whittle down the wine list to just 100 reds and whites – which is still 10 times as many as you’ll find at any other pizza shop in town.
