Sydney's dreamiest dessert, the Snow Egg, returns to Quay for a limited time only

It appears we’re not the only ones who have been egging on Peter Gilmore to bring back his most iconic Quay dessert.

After a 6-year absence, the Snow Egg will be rolling back onto the dining scene this month as part of a special collaboration between American Express and Quay restaurant. The ethereal egg will be available to try for just 10 evenings, from May 25 – June 15, 2024.

Guests can book a one-of-a-kind dining experience to smash the Snow Egg along with a glass of Charles Heidsieck Champagne or non-alcoholic offering. The special sitting will take place in Quay’s Green Room, which boasts some of the best views of Sydney Harbour in all its Vivid glory.

Peter Gilmore said: “I am honoured to be bringing back the Snow Egg for a very limited time. It has had a cult following since the early days of it being on the menu at Quay and holds such a special place in my heart.”

It may be your last-ever chance to crack open the maltose-coated meringue with the back of your spoon, revealing the sweet custard apple ice cream within. The shimmering sphere sits atop a sweet stack of guava granita and guava fool. Swirl it all together for the most incredible flavours and textures. But don’t take our word for it.
